Summer Food Diary - What I Eat In A Day!



Breakfast

Today i decided to make an Omelette. I don't have these normally but fancied it today :-) I usually like to get some Protein in at Breakfast and it keeps me full for longer. I added Spinach and Feta Cheese in this and i used two eggs.  I also had a Lemon Green Tea like i always do at Breakfast.

Morning Snack

I haven't had yoghurt's in ages but bought some Strawberry Muller Light the other day so had one for a snack today. They are really refreshing to eat in the Summer. If you are looking at this as being really healthy then this isn't a great option, Natural Yeo Valley would have been better but i didn't have any :-)

Lunch

I made an Egg sandwich, added some Classic Mayonnaise (Sussex Valley) and some Spinach. Bread isn't the healthiest but i wasn't feeling a salad today. This sandwich though was really good :-) 

Afternoon Snack

I bought some Ryvita Original Crisp Bread, layered a very thin layer of butter and then added salmon on top. I also squeezed some lemon juice on top and it makes it taste amazing. I love this for a healthy snack, maybe by NOT adding the butter would make it more healthy! :-D

Dinner

I wasn't too sure what i was having for dinner today but i had defrosted one of my Chicken Breasts so  i had to use it. I then really fancied Pesto Chicken Pasta. I didn't have any Pesto sauce though so improvised and made a sauce. I have never made this before but mushed up Avocado with a garlic clove and squeezed some Lemon Juice into it. I used my healthier Spelt Spaghetti, Organic Wholegrain which i prefer now to the normal type i used to have. I thought the sauce was OK for being on the healthy side of things! BUT i thought something was missing, it wasn't until i had finished my dinner that i realised i never grated any cheese on top!! That is like the main part for a Pasta dish, how could i forget! loll I also had a Mint Green Tea with this.

Evening Snack

With the weather being so good at the moment it always makes me crave fruit, it is so refreshing.
I couldn't pick just one so i decided to make a fruit salad. I added Strawberries, Kiwi, Grapes and Oranges.
