How to make Healthy Granola/Oat Mix

This is probably my favourite breakfast at the moment. I like to add a mix of chopped fruit and natural yogurt :-)
This is a healthier way than just buying it in the shops. It doesn't take too long to do and you can get a few portions out of it depending how much you make and how much you have each portion.

So if you are trying to be more healthier than definitely try this, it is very yummy :-)

You can do any measurements but i like to make enough for more than one portion. I tend to get about 4-5 portions out of this. Depending how much i use really...

I weigh out 150 grams of oats.

I take a mix of different nuts and weigh out 150 grams.
Here i am using cashews, mixed almonds, macadamia nuts, pumpkin seeds and flaked almonds.

I then chop the nuts up (to the size you like)

Then i take 50 grams of coconut oil and 50 grams of honey and put into a saucepan.
Or you can use maple syrup to be even healthier but honey gives it a much sweeter taste :-)

I put all of my oats and nut mix on to a baking tray and heat the oil and honey. I melt it about half way then turn the heat off as i don't want it to be really hot or over cook.

Then you can pour over the mixture from the saucepan.

Then i would add cinnamon over the mix. I only had a tiny bit left for this portion but you can add as much as you like. I usually add quite a bit more than in the photo.

Then i use my hands to mix it up so that all the nuts and oats are covered well. I squeeze clumps together with my fingers too to help stick the oats together (like granola) however honey isn't the stickiest but if we used golden syrup then it wouldn't be that healthy!

This is the finished result.

I put this in the oven on gas mark 3 on the top shelf for 15 minutes.
I make sure i set the timer on my phone so it doesn't over burn.

I then mix it about and then put it back in to brown again for 5 minutes.
Then again take it out, mix it around, put it in another 5 minutes and then again for one last 5 minutes.

Usually 3 lots of 5 minutes with mixing up in between each time evenly browns it all perfectly.
That is the best way i found to cook it anyway but you may find a different timing routine, depending on your oven or how cooked you like it.

Next time i make this i think i will chop up ALL of the nuts/seeds together and store in a tupperware so when i go to cook it i don't need to stand there each time chopping because that is the part that takes the longest.

I hope you enjoyed this post and do let me know if you are going to try this out :-)

Worst Primark skirt - Embarrassing story!

I went shopping a few days ago and picked up a skirt from Primark. It was a black pencil skirt i wanted for work.
It had a zip running all the way down, from top to bottom, i really liked the style of it and was only £8.00.

I wore it to work for the first time 2 days ago. I work in a leisure center, in the membership sales office next to the gym. I was on my own for the last half of my shift and so closed everything down, grabbed my bag and headed around into the gym and into the changing rooms.

When i got into the changing rooms i took my skirt off, i slipped it off and then saw this had happened...

I just stood in shock for a second....'omg did i just walk around with the zip like this, noooo' :-/
I didn't even know what to do! So got changed for the gym, went back to reception and asked the guy, 'erm, did youu....?' he replied very quick 'yes, yes i did!!' i was so embarrassed!!

Basically when i had walked out i said hi to him sitting at reception and i think there was another man/lady sitting on the seats outside the class studios. A few people in the gym, next to reception and that was all i remember....thank god it was the evening and was quiet at that point because when i came out the changing rooms, reception area was packed with people from finishing classes!

The guy at reception then came over to me in the gym and was saying not to worry about it, its fine! I asked how much did you see, he paused 'errmmm...' yep ok nevermind, i take that response as you saw enough :-/ ha! He then said he saw a bit earlier part of my zip had a gap in it but he wasn't sure if that was the way it was meant to be?! So i won't really know how long my skirt was like that for, i am hoping as i went to the loo just before i finished, maybe moving it from that triggered it to split fully. If i was wearing pretty knickers i would have dealt a little better with it but nooooo it was that time of month for me wasn't it and i was wearing bloody granny pants!! ha! ok well not exactly granny pants but you know what i mean...lol

So anyway i wouldn't risk wearing that skirt again, so took it back for a refund!!!

So be careful when buying this skirt yourself, keep an eye on that zip!!!
